The operator places the product in a bag and then positions the opening on the sealing bar. They then move the tilting lid towards the loaded chamber. The pump removes the air from the bag and the chamber. When the machine reaches the programmed vacuum level, it seals the bag before gradually reintroducing air into the chamber. This process limits the amount of oxygen around the product, protecting the food from oxidation, dehydration, and external contamination. It also facilitates storage, ripening, transport, and the organization of the various production stages. However, the shelf life depends on the product, the bag, the temperature, and the hygiene regulations applied by the user. Dual chamber and bag sealing The C500 has two chambers and a moving lid. The manufacturer offers several sealing systems depending on the configuration: single sealing, double sealing, or sealing with trimming of the bag excess.
